“We do have something planned, but I won’t tell you,” Musk said to the ABJ.
The project is described as consumer-focused in downtown Austin and “definitely something that people can enjoy.”
“Making a big bet on Austin is a no-brainer,” Musk said. “This town, even though it has gone through an expansion and now it’s going through a contraction, relatively speaking, it’s doing very well. It’s the boom town of the ’20s in America.”
The Kitchen Bistro was slated to open Nov. 14. The restaurant has a location in Chicago and two in Colorado, in Denver and Boulder. The restaurant group has a home-base address in Colorado but Musk said he lives in downtown Austin.
Musk said he isn’t worried about opening his restaurant during a down period for many restaurateurs in Austin.
“The difference between being open for a few years or 20 — which as we have been in Denver 14 years, Chicago 10 years — is you go through all those waves,” he said. “We don’t go into it with how is the restaurant industry doing now? We really think about focusing on being beloved by our community, focusing on great people.”
