Community Owned Deli to Persist

As Wheatsville Co-Op begins to plan its future beyond its current Gualaupe location, head of operations Bill Bickford confirms to What Now Austin that its deli will indeed be part of the beloved establishment’s future.

“We plan to offer some level of food and beverage service at any future locations, though the breadth of those offerings will depend heavily on the footprint and infrastructure of the locations we ultimately secure,” Bickford tells What Now Austin

“At minimum, all locations will offer grab and go lunch and dinner options as well as fresh bakery items produced out of our South Lamar store, where we have ample capacity to serve multiple satellite locations. Full service options could vary significantly depending on the size and sales volume of each individual location.”

Furthermore, fans of the deli’s creative and healthy offerings of bowls, salads, burritos, wraps, and tacos, need not fear for the original deli’s early close.

“We have no immediate plans to close the deli early. That said, as we approach our closing date, it is possible that we may reduce certain departments or features in order to facilitate a smooth transition to new location,” said Bickford. 

“Closing a location is new for our organization, and Guadalupe served as our flagship for decades. So we have not yet fully developed a roadmap for what winding down the store will look like. We hope to know more when we’re able to share where our future location(s) will be.”
