According to recent reporting in Austin Community Impact, local couple and co-franchisees Jack and Aly Plimpton will open an ice cream shop in Bastrop, near the upcoming Chipotle in 2025.
Citing Jack Plimpton, CI reports that their store–Jeremiah’s Itailan Ice–will feature “a fun atmosphere with indoor and outdoor seating, as well as walk-up windows.”
“We hope to create a place for community, fun and a cool, vibrant time,” he said. “Whether it is for an after-school treat, an evening adventure or a relief stop during errands, Jeremiah’s Italian Ice will be able to help.”
“We instantly fell in love with the town,” Jack Plimpton said about Bastrop.
“We hope to contribute to and enhance such a wonderful place while protecting its charm.”
