Sushi Roku to Open Downtown Location

Construction is estimated to reach completion in October 2023.

Sushi Roku, the elevated sushi concept by Innovative Dining Group, will soon begin construction on a downtown location according to recent public records. The restaurant will be located at 405 Colorado Street, within suite 116, near upscale eateries such as Péché and The Capital Grille.

“Sushi Roku combines the finest, freshest fish from pristine waters around the globe with the kind of artistry that can only be provided by a mature sushi chef ensuring superlative traditional sushi, together with a splash of California innovation,” the official website states. 

“Sushi Roku is a pioneer of contemporary sushi, incorporating diverse, non-traditional ingredients from Latin America (e.g. jalapeños) and Europe (e.g. olive oil) into its edible works of art.” 

What Now Austin reached out to Seth Glassman, Director Of Operations at Innovative Dining Group, to inquire about this exciting new development in the downtown upscale food & beverage landscape, but he was not immediately available for comment. 

Fortunately, public records examined by What Now Austin provide key information: construction will consist of “improvement to an unoccupied ground floor shell tenant space”, cost around $663,000, cover a spacious 4,418 square feet, and reach completion in October 2023. 

Apart from Sushi Roku, the California-based Innovative Dining Group runs upscale brands such as Boa Steakhouse, B Grill, Katana, and others.
