“I’m thrilled to partner with David (Norman) and the entire team at Easy Tiger,” Coerver said in a statement. “Easy Tiger embodies the essence of Austin with its high-quality artisanal breads, down-to-earth restaurant & patio settings, and commitment to the community. It’s an Austin original and a one-of-a-kind in the food service category.”

Coerver will reportedly study the business for a month before making any major decisions, though clear objectives for 2024 include “growing sales at existing restaurants and expanding baked goods into more retail stores before considering further expansion.”

“I always start going into the inside and working on the culture, because a strong culture is what creates a strong business. That’s where I’m going to focus the majority of my energy in the coming months, is really around optimizing the current assets. And then at that point we’ll step back with ownership and sort of reassess where we are and determine what we think are the best next steps for the brand,” Coerver said.
