Mediterranean Fast Casual Chain Building Leander Spot

The fast-casual Mediterranean restaurant, CAVA, appears to be setting up shop in Leander. A recent project filing lists the newest location for the brand at 128 South Brook Drive in Leander.

CAVA’s menu offers diners a variety of bowl and pita options. Guests can build a bowl starting with a base of greens, grains, or both, or choose the pita option. They can then add a dip or spread such as hummus, roasted eggplant, tzatziki, or Crazy Feta. Proteins include grilled chicken, Harissa Honey chicken, falafel, and spicy lamb meatballs. Diners can then top their creations with a variety of ingredients and a dressing.

The latest addition for CAVA will be located in a 2,500-square-foot space, according to the project filing. It will undergo a “Tenant fit out for a fast-casual restaurant use in an existing shell building” and work will include “new kitchen equipment, restrooms, and interiors, including mechanical, plumbing and electrical work.” Construction is projected to wrap up in September 2024.

CAVA currently has about half a dozen locations across the Austin area, with others in the Dallas-Fort Worth Metroplex, San Antonio, and Houston. CAVA was founded in Maryland back in 2011 and now has locations across two dozen other states.
