Chuy’s to Open Mueller Location

Chuy’s, the Austin-based Tex-Mex chain, will soon be opening a new location in Austin’s Mueller neighborhood, according to recent public records. The restaurant will be located at 2027 Aldrich Street, near Mum Foods and Marufuku Ramen.

What Now Austin reached out to John Mountford, COO of Chuy’s, to inquire about potential opening dates and menu changes, but he was not immediately available for comment. 

Fortunately for eager readers, the public records are quite illuminating and specific in detail: the construction will cost a notable $2,379,000 and cover 8,379 square feet of space. Despite the massive size, estimates do anticipate an opening by December 2023 after around five months of construction work.

Narrating the company’s origins on the official website, “Chuy’s opened on April 16, 1982 in an old, aban­doned Texas Barbeque joint on iconic Barton Springs Road in Austin, TX. There was seating for about sixty, a women’s restroom the size of a broom closet and a men’s restroom that was, well, outside.” 

“Founders Mike Young and John Zapp had a vision of a fun and funky Tex-Mex restau­rant that served authen­tic and fresh food in an atmos­phere that appealed to everyone. From these humble begin­nings, Chuy’s was born.”

Until the newest Chuy’s location opens its doors, Tex Mex fans can find 15 locations across the State of Texas, from San Antonio to Dallas-Fort Worth.
