Popular Hill Country Pizza Debuting Brick and Mortar

Until its spring 2024 opening, readers can sample Prometheus Pizza at upcoming Austin pop-ups at LoLo and Hotel San Jose.

According to recent public records, the popular food truck Prometheus Pizza plans to open its first brick-and-mortar location in Fredericksburg. The restaurant will be found at 108 S Lincoln Street #300, near establishments such as Becker Vineyards, Pasta Bella, and West End Pizza Co.

According to the records, construction and renovations within the 2,025-square-foot are anticipated to be completed in March 2024, costing approximately $250,000 in total.

A recent report in Eater states that Prometheus serves up “fun pies with punny names like the Breakfast of Champions, topped with boar chorizo, potatoes, and cured egg yolks; the Hestia Goes to Hawaii with pineapple, pancetta, and pickled jalapenos; and the CALL: 1-800-420-SHRM with shiitake mushrooms, a dehydrated mushroom dust, and pecan-pesto cream. Then there are salads like a Caesar, snacks like marinated olives, and desserts like brownies, peanut butter and jelly cookies, and lemon buckwheat tarts.”

“The forthcoming physical restaurant will expand its menu sandwiches (with hot and cold options), house-made pastas, and other entrees. It’ll be open for breakfast service with coffee and pastries from 7 a.m. to 11 a.m., and then go into lunch and dinner services from 11 a.m. to 10 p.m., all daily,” the report adds.
