What Now Austin recently contacted owner Javier Llamas to get the latest on this upcoming development—our first story set in Caldwell county.

“Twenty years ago my mom started her food truck there,” owner Javier Llamas tells What Now Austin. “We’re trying to give the people of Martindale a better place, faster service, somewhere where they can sit inside with A/C when it’s hot here in Texas.”

When asked about the menu, Llamas describes one that is both familiar and authentic.

“We’ll have guisados, pastor—we come from Zacatecas, so we get a lot our flavor from there. We have aguas frescas, five flavors, all natural. We have all-day breakfast and lunch. We’ll also be open for dinner.”

Mr. Llamas adds that given the upcoming establishment’s full capacities, the original food truck will be phased out after opening.

When can readers anticipate this exciting new development to be up and running?

“Hopefully in about six months.”
