What Now Austin recently spoke to Co-Franchisee Andrew Vergara, who is running the restaurant alongside his partner John Pham.

Outlining the expected timeline for the restaurant, Mr. Vergara says “Once we get the State approval—we’ll be submitting that sometime this week—we’ll begin the renovation process and are hoping to be done by March or April, but the timeline can change.”

When asked why he decided to open a franchise with The Alley, Mr. Vergagra states “My partner and I talked about it a few years ago, about wanting to run a boba shop together, and this year was our opportunity to open one. Now we’re excited to see what happens next.”

Defining the brand’s concept on the official website, The Alley states “A good cup of tea is hidden within each and every one’s heart. On that relaxing afternoon, bath in sunshine’s’ warmth, sprinkle by breezy wind, charmed by a lover’s smile, fulfilled by the pleasing aftertaste. Reminisce the touching satisfaction from that first cup of good tea, to share this delight with everyone, to keep up with this originality, give rise to “The Alley.””
