Cabo Bob’s Opening Deep South Austin Location

Cabo Bob’s, the popular burrito chain, will soon begin building out an outpost in the Onion Creek area of south Austin, according to recent public records. The restaurant will be found at 11215 S IH 35, within The Shops at Onion Creek.

Unfamiliar readers can imagine Cabo Bob’s as a Baja California-inspired Tex-Mex fast casual chain, but with standout characteristics such as having flavored tortillas, homemade salsas, grass-fed beef and being the first restaurant in the country to be entirely free of High Fructose Corn Syrup. 

Public records exmained by What Now Austin show that the construction job in question will cover the “remodel of 2 separate suites into one larger suite for restaurant” and cost an estimated $227,000. If timeline estimates are correct, the restaurant should be complete by December 2023. 

“To my friends and me, Cabo Bob became the general term for that person who just has life and his surroundings figured out, he never stresses, he just moves on down the road to a better spot,” the official website states.

“After all, he knows where all the best places are! This restaurant was created to honor the spirit of Cabo Bob. We all know someone like him. Knowing that most of us can’t live like Cabo Bob, we hope you come to think of this as a great spot where you can come in and get the best Burritos and Fish Tacos in a stress-free environment—except for the cooks, we like to keep them busy.”
