Fredricksburg Hotel Debuting Four Eateries

According to its official website, The Albert Hotel, a boutique hotel from the New Waterloo hospitality company, will soon open several food & beverage establishments.

The Pharmacy will be a “neighborhood market, offering classic market-style counter service, with daily seasonal items, pastries & breads made from scratch, and local goods & gifts.”

“The culinary program at the Pharmacy will be helmed by New Waterloo’s culinary director, Amanda Rockman, who was nominated as a James Beard semifinalist in 2015, received the Jean Banchet “Pastry Chef of the Year” Award in 2011 & 2012, and was named Chicago Tribune’s “Pastry Chef of the Year” in 2012,” set to open this spring.

White Elephant Saloon will be a “watering hole. Where the whiskey is strong, the beer is cold and the people are friendly. A historic staple in Fredericksburg dating back to 1888,” also slated for a spring opening.

Junebug will be a “backyard BBQ joint, celebrating food, community, family and friends. The BBQ is bona-fide; the Texas sunsets are free.”

“Housed in the historic Brockmann-Kiehne house built in 1870 on Austin St., the menu at Junebug’s will be led by New Waterloo’s Head of Food & Beverage, Justin Spencer, who also happens to be a competition barbecue pitmaster. His accolades range from “18th Best Brisket in the World” to “Best Chicken Wings at Memphis in May,” and multiple other national titles,” scheduled for the summer.

And finally, The Restaurant at Albert, “a gourmet dining experience, featuring seasonal menus, a connection to the land, and the best ingredients from the surrounding community of farmers, ranchers, purveyors & artisans.”
